Chicken, Penne Pasta, Mushrooms and Tomatoes


This is a satisfying supper or lunch. Easy and quick to prepare. Also, easy to adapt to what’s in your fridge.

Ingredients for 2 people:

  • 4 ounces grilled chicken breast -no skin, cubed
  • 1 cup of fresh broccoli florets
  • 112 grams dry penne pasta, cooked al dente
  • 1 medium ripe tomato
  • 40 grams of mushrooms
  • olive oil in a pump spray can
  • a teaspoon of grated parmesan
  • fresh basil

Start a pot of water boiling for pasta. Spray olive oil in a non-stick pan, warm up grilled chicken.  After you warm the meat, take it out of the pan and add the mushrooms and broccoli. You don’t want to cook them to death, just soften the mushrooms. Add the tomatoes and fresh basil and take a few tablespoons of pasta water from the pasta and add to veg. If the pasta finishes first, save a little water. It has a tiny bit of starch and adds a nice finish to the veg. Toss everything together when done. Add extra herbs from your garden or red pepper flakes. Finish with cheese.

Per serving: 255 calories, 24g carb, 2g fat, 44g protein

Don’t eat in front of TV, set a table, taste your food, chew it and enjoy it!

We try to grill a week’s worth of chicken and salmon on Sunday. My husband enjoys sitting at the grill drinking Guinness, that’s his zen, he is also 6’3″ and only weighs 170 lbs. -so could care less about calories! (I love him for loving fat, short me!)
