I’ve been gardening, which is hard sweaty work! I need a more substantial breakfast. I am not getting hungry but getting weak. These ingredients have a great fresh taste, filling but still low calorie!
- Olive Oil
- Sliced fresh peppers
- Cherry Tomatoes
- Chopped garlic
- Egg Whites
- Pace Garlic Lime Verde Sauce
- 2 6″ Tostadas / Corn Tortilla
Heat skillet over medium heat. Spray skillet with olive oil, add sliced peppers and halved cherry tomatoes. Add a small handful of spring mix lettuce, the steam and heat from veg will wilt it fast. Pour 3 tablespoons of egg white over all. The egg white will set quickly, pour a teaspoon of verde sauce and a teaspoon of garlic across ingredients. Add a plop a teaspoon of guacamole, there is no need to spread. Take a spatula and lift egg mixture and slice a tostada under all. Then press another tostada on top. The ingredients act like a glue, so you have a little help flipping the whole thing to warm other side. How long you heat these sides depends on whether you want it crispy or soft and warm.
