Here’s a new healthier breakfast, I used an Olé Whole Wheat Tortilla and added a tablespoon of cottage cheese.
Soft Breakfast Taco 162 calories
Ole Whole Wheat Tortilla (120 cal)
1 Egg White (17 cal)
1/8 c peppers (3 cal)
1/8 c cottage cheese (21 cal)
1/8 c lettuce (1 cal)
hot sauce (optional)
Over medium heat, warm up a non-stick frying pan, spritz once with olive oil. Add slice pepper rings, when they are cooked to the desired doneness, pour on egg white. When egg white is set, add cottage cheese, top with lettuce. Slide onto tortilla, sprinkle a few drops of hot sauce (optional, but makes up for no salt) and fold over.
Breakfast Total: 162 cal, 20 g carbs, 4 g fat, 12 g protein
For a complete breakfast add:
Stoneyfield Activia Yogurt (90 cal)
Coffee w/ 1/2 c Milk (66 cal)
Complete Breakfast Total: 318 cal, 38 g carbs, 6 g fat, 21 g protein
